English Lemon Cookies

Ingredients:
3/4 cup granulated sugar
1 egg or egg substitute
2 1/2 tbsp cooking oil
1/4 tsp. finely grated lemon peel
1/2 tsp. fresh lemon juice
1 1/2 cups cake flour*
1/2 tsp. salt
1/4 tsp. baking soda
1/2 tsp. baking powder
1/4 cup non-fat vanilla or plain yoqurt

Directions:
(* For all purpose flour use only 1 1/4 cups plus 1 tablespoon.)

In large bowl combine sugar, yogurt, egg, oil, lemon peel and lemon juice; stir until well blended. In small bowl, stir together flour, baking soda, baking powder and salt. Add to egg mixture; stir until well blended.
Spray cookie sheet with no-stick cooking spray. Drop by rounded teaspoons 2 inches apart onto cookie sheets. Bake at 375 degrees for 9 to 12 minutes or until edges are light golden brown. Cool one minute; remove from cookies sheets to wire cooling racks and cool completely. Makes 18 cookies.

Nutrition:
Each cookie provides approximately 88 calories, 11 mg cholesterol and 85 mg sodium.
